Ingredients

2 medium zucchinis, sliced into ½ inch rounds

1 cup breadcrumbs (Panko for extra crunch)

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

2 large eggs

½ cup all-purpose flour

Salt and pepper to taste

Fresh herbs for garnish (parsley or basil), optional

Olive oil spray

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and non-stick cooking.

Prepare the Zucchini: Slice the zucchinis into ½ inch rounds and place them on a clean kitchen towel. Sprinkle lightly with salt and let them sit for about 10 minutes. This will help draw out excess moisture.

Set Up Breading Station: In three shallow bowls, set up your breading station:

        - In the first bowl, place the flour seasoned with salt and pepper.

          - In the second bowl, whisk the eggs until well beaten.

            - In the third bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, and smoked paprika. Mix well.

Coat the Zucchini Rounds: Pat the zucchini slices dry with a towel to remove excess moisture. Dredge each round in the flour first, shaking off the excess. Next, dip it into the egg wash, allowing any extra to drip off, and finally coat it with the breadcrumb mixture, pressing gently to adhere.

Arrange on Baking Sheet: Place the coated zucchini rounds on the prepared baking sheet. Ensure they are not touching to allow for even cooking. Lightly spray the tops with olive oil spray for added crispiness.

Bake the Rounds: Bake in the preheated oven for 20-25 minutes or until golden brown and crispy. Flip halfway through for even browning.

Garnish and Serve: Once baked, remove the zucchini rounds from the oven and let them cool slightly. Garnish with fresh herbs if desired, and serve warm as a delightful snack or side dish.
