Ingredients

8 small corn tortillas

1 cup assorted charcuterie meats (salami, prosciutto, chorizo), thinly sliced

1 cup aged cheddar cheese, shredded

½ cup goat cheese crumbles

½ cup roasted red peppers, sliced

¼ cup olives (green and black), pitted and sliced

1 ripe avocado, sliced

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

Fresh arugula, for garnish

Fresh herbs (e.g., parsley or basil), for garnish

Salt and pepper, to taste

Lime wedges, for serving

Instructions

Prepare the Tortillas: Heat a skillet over medium heat. Lightly brush each tortilla with olive oil on both sides. Place them in the skillet one at a time, cooking for about 1-2 minutes on each side until crispy and golden brown. Set them aside on a paper towel-lined plate to absorb excess oil.

Flavor the Charcuterie: In a bowl, mix the assorted charcuterie meats with smoked paprika, garlic powder, salt, and pepper. This will enhance their flavor and complement the rest of the ingredients.

Assemble the Tacos: On each crispy tortilla, layer a combination of the seasoned charcuterie, aged cheddar cheese, goat cheese crumbles, roasted red peppers, and olives. Leave enough space to add avocado and arugula later.

Melt the Cheese: Carefully return the assembled tacos to the skillet over low heat. Cover with a lid to allow the cheese to melt gently, about 2-3 minutes.

Add the Finishing Touches: Once the cheese is melted, remove the tacos from the skillet and top each with fresh avocado slices and a handful of arugula. For an extra burst of flavor, sprinkle with fresh herbs and a squeeze of lime juice.

Serve Immediately: Arrange the crispy charcuterie tacos on a serving platter with lime wedges on the side for extra zest. Enjoy them warm, sharing them with family and friends!
