1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

1/2 cup BBQ sauce (your favorite brand)

1 head of butter or iceberg lettuce, leaves separated

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 avocado, diced

Fresh cilantro or parsley, for garnish

Lime wedges, for serving

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a bowl, combine the drained chickpeas with olive oil, smoked paprika, garlic powder, onion powder, ground cumin, chili powder, salt, and pepper. Toss until the chickpeas are well coated.

      Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes or until they are crispy and golden brown, shaking the pan halfway through the cooking time.

        Combine BBQ Sauce: Once the chickpeas are done roasting, remove them from the oven and immediately mix in the BBQ sauce, ensuring that all chickpeas are nicely coated.

          Prepare Lettuce Boats: While the chickpeas are roasting, carefully wash and dry the lettuce leaves. Set them aside on a serving platter.

            Assemble Boats: In each lettuce leaf, spoon some of the BBQ chickpeas. Top with halved cherry tomatoes, chopped red onion, and diced avocado.

              Garnish: Sprinkle chopped cilantro or parsley over the top for added freshness.
