1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

2 large eggs

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or a drizzle of olive oil.

    Prepare the Zucchini: Rinse the zucchinis under cold water and pat them dry. Cut them into fries—slice each zucchini in half lengthwise and then into strips about 1/2-inch wide.

      Set Up the Breading Station: In one bowl, beat the eggs and add the olive oil, mixing until well combined. In another bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, smoked paprika, and a generous pinch of salt and pepper.
