Crispy Baked Lemon Garlic Salmon Skewers

1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

3 tablespoons fresh lemon juice

Zest of 1 lemon

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and black pepper, to taste

1 bell pepper (red or yellow), cut into 1-inch squares

1 small red onion, cut into wedges

Fresh parsley, for garnish

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes beforehand)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, smoked paprika, salt, and pepper.

    Marinate the Salmon: Add the salmon cubes to the marinade, making sure they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 2 hours for a more intense flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.

        Assemble the Skewers: Thread the marinated salmon onto the skewers, alternating with pieces of bell pepper and red onion. Aim for a balanced mix for color and flavor.

          Bake the Skewers: Place the skewers on the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through. Halfway through, you can carefully flip the skewers for even cooking.

            Broil for Crispiness: If you prefer an extra crispy finish, switch your oven to broil mode and broil the skewers for an additional 2-3 minutes, keeping a close eye to prevent burning.
