Ingredients

1 lb boneless, skinless chicken breasts (cut into strips)

1 cup all-purpose flour

2 large eggs (beaten)

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried oregano

Cooking spray

For the Honey Mustard Dipping Sauce:

½ cup mayonnaise

2 tablespoons Dijon mustard

2 tablespoons honey

1 teaspoon apple cider vinegar

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray to prevent sticking.

Prepare the Breading Station: Set up a three-bowl assembly line:

      - In the first bowl, place the flour and season with garlic powder, onion powder, smoked paprika, salt, pepper, and oregano.

        - In the second bowl, beat the eggs until smooth.

          - In the third bowl, add the panko breadcrumbs.

Coat the Chicken Tenders: Take each chicken strip and first dip it into the flour mixture, ensuring it is evenly coated. Shake off any excess flour. Next, dip it into the beaten eggs, allowing any excess to drip off, then finally coat it with the panko breadcrumbs, pressing gently to adhere.

Arrange on Baking Sheet: Place the coated chicken tenders on the prepared baking sheet, ensuring they are not touching (this will help them crisp up). Lightly spray the tops of the chicken with cooking spray to encourage browning.

Bake the Chicken Tenders: Place the baking sheet in the preheated oven and bake for 15-20 minutes, flipping the tenders halfway. They should be golden brown and reach an internal temperature of 165°F (75°C).

Prepare the Honey Mustard Sauce: In a small bowl, combine mayonnaise, Dijon mustard, honey, apple cider vinegar, and a pinch of salt and pepper. Whisk until smooth and adjust seasoning according to taste.

Serve: Once the chicken tenders are crispy and fully cooked, remove them from the oven and let them rest for a couple of minutes. Serve warm with the honey mustard dipping sauce on the side.
