Crispy Baked Chicken Nuggets with Honey Mustard

For the Chicken Nuggets:

1 lb (450g) boneless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

Cooking spray or olive oil

For the Honey Mustard Dipping Sauce:

¼ cup mayonnaise

¼ cup Dijon mustard

2 tbsp honey

1 tbsp apple cider vinegar

Salt and pepper to taste

Preheat Oven:

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

      Prepare the Dipping Sauce:

        In a small bowl, combine mayonnaise, Dijon mustard, honey, and apple cider vinegar. Mix until smooth and well combined. Taste and adjust seasoning with salt and pepper as needed. Set aside in the refrigerator to let the flavors meld.

          Prepare the Breading Stations:

            Set up a breading station with three shallow bowls. In the first bowl, place the all-purpose flour. In the second bowl, beat the eggs until well mixed. In the third bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

              Coat the Chicken:

                Take each piece of chicken and dredge it first in the flour, shaking off any excess. Next, dip it in the beaten eggs, allowing the excess to drip off. Finally, roll it in the panko-Parmesan mixture until fully coated. Place the breaded chicken nuggets on the prepared baking sheet.
