Crispy Air Fryer Falafel Wraps

For the Falafel:

1 cup dried chickpeas, soaked overnight

1 small onion, roughly chopped

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon coriander

1/2 teaspoon baking powder

1 teaspoon salt

Pepper to taste

2 tablespoons olive oil

Optional: a pinch of cayenne pepper for heat

For the Wraps:

4 whole wheat or pita wraps

1 cup lettuce, shredded

1 medium tomato, diced

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/2 cup tahini sauce or your favorite dressing

Prepare the Chickpeas: Drain and rinse the soaked chickpeas. Make sure they are dry to help them crisp up in the air fryer.

    Make the Falafel Mixture: In a food processor, combine the dried chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is well combined but still chunky—be careful not to over-process it into a paste.

      Form the Falafel Balls: Scoop out the mixture using a tablespoon (or use your hands) and shape them into small balls or patties.

        Air Fry the Falafel: Preheat your air fryer to 375°F (190°C). Lightly coat the falafel balls with olive oil to enhance their crispiness. Place them in the air fryer basket (you may need to do this in batches) and cook for about 12-15 minutes, flipping halfway through, until they are golden brown and crispy.

          Prepare the Wrap: While the falafel is cooking, prepare your wrap. On each whole wheat or pita wrap, layer shredded lettuce, diced tomato, cucumber, and red onion.

            Assemble the Wraps: Once the falafel is cooked, place 3-4 falafel balls on top of the veggies in each wrap. Drizzle with tahini sauce or your preferred dressing.
