Creamy Vegan Spinach Pasta

12 oz (340g) pasta of choice (e.g. penne, fusilli)

4 cups fresh spinach, washed and roughly chopped

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup cashews (soaked in water for at least 2 hours and drained)

1/2 cup nutritional yeast

1 cup unsweetened almond milk (or any plant-based milk)

Juice of 1 lemon

2 tbsp olive oil

Salt and pepper to taste

1/2 tsp red pepper flakes (optional, for a bit of heat)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

    Prepare the Creamy Sauce: In a high-speed blender, combine the soaked cashews, nutritional yeast, almond milk, lemon juice, and a pinch of salt and pepper. Blend on high until the mixture is completely smooth and creamy. Adjust the consistency with reserved pasta water if needed and set aside.

      Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes (if using), cooking for an additional 1-2 minutes until fragrant.

        Cook the Spinach: Add the chopped spinach to the skillet with the onions and garlic. Sauté for about 3-4 minutes, or until the spinach is wilted.

          Combine Pasta and Sauce: Lower the heat and add the cooked pasta to the skillet. Pour in the creamy sauce and mix thoroughly to combine. If the dish seems too dry, add a little more of the reserved pasta water to reach the desired creaminess.

            Season to Taste: Taste your creamy spinach pasta and adjust seasoning with salt, pepper, and more lemon juice if desired.
