Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 cup heavy cream or full-fat coconut milk for a dairy-free option

1 pound store-bought gnocchi

2 cups fresh spinach (or kale)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic, dried basil, oregano, and red pepper flakes (if using) and cook for an additional minute until fragrant.

Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes to allow the flavors to meld.

Incorporate Cream: Lower the heat and slowly stir in the heavy cream or coconut milk. Mix well until combined.

Cook Gnocchi: Add the gnocchi to the soup and simmer for another 3-5 minutes, or until the gnocchi float to the surface and are tender.

Add Greens: Stir in the fresh spinach and let it wilt for about 2-3 minutes. Season the soup with salt and pepper to taste.

Serve: Ladle the hot soup into bowls and garnish with fresh basil leaves and grated Parmesan cheese, if desired. Enjoy your creamy and comforting bowl of goodness!
