Creamy Tomato Basil Pasta with Spinach and Chicken

8 oz (225g) pasta (fettuccine or penne)

2 tablespoons olive oil

2 boneless, skinless chicken breasts (about 1 lb), sliced into strips

Salt and pepper, to taste

3 cloves garlic, minced

1 (14 oz) can crushed tomatoes

1 cup heavy cream

1 cup fresh spinach, chopped

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

½ cup fresh basil, chopped

¼ cup grated Parmesan cheese, plus extra for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the crushed tomatoes and stir to combine. Allow the mixture to simmer for 3-4 minutes.

        Make it Creamy: Reduce the heat to low and stir in the heavy cream. Mix in the dried oregano, red pepper flakes (if using), and season with salt and pepper to taste. Stir until fully combined and creamy.

          Combine Ingredients: Add the cooked pasta, sautéed chicken, chopped spinach, and fresh basil to the skillet. Toss everything together, ensuring the pasta is well-coated with the creamy sauce. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

            Finish the Dish: Stir in the grated Parmesan cheese and mix until melted and combined. Taste and adjust seasoning if necessary.
