12 oz pasta (penne or fettuccine)

2 tbsp olive oil

4 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 cup heavy cream

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese (plus more for serving)

1/4 cup fresh basil, chopped (plus more for garnish)

1 tsp Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

      Add Tomatoes and Cream: Stir in the diced tomatoes (with their juices) and let them simmer for about 5 minutes. Then, reduce the heat to low and slowly pour in the heavy cream, stirring well to combine.

        Incorporate Spinach: Add the chopped spinach into the skillet, allowing it to wilt while stirring the mixture for about 2-3 minutes.
