8 oz (225g) pasta (fettuccine or penne)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz/400g) diced tomatoes

1 cup heavy cream

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese

Crushed red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta:

    - In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

      Prepare the Sauce:

        - In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

          Add Tomatoes and Simmer:

            - Pour in the canned diced tomatoes (with juice) and add the dried oregano, salt, and pepper. Let it simmer for 5-7 minutes, allowing the flavors to meld.

              Incorporate the Cream:

                - Reduce the heat to low, then add the heavy cream to the tomato mixture. Stir well to combine and let it simmer for another 3-5 minutes until slightly thickened.

                  Combine Pasta and Sauce:

                    - Add the cooked pasta to the skillet, tossing to coat in the creamy tomato sauce. If the sauce is too thick, add a bit of the reserved pasta water to achieve your desired consistency.

                      Add Fresh Basil and Cheese:

                        - Remove from heat and stir in the chopped basil and grated Parmesan cheese. Taste and adjust seasoning with more salt, pepper, or crushed red pepper flakes if desired.

                          Serve:
