Creamy Sweet Potato Mac & Cheese

8 oz elbow macaroni

1 medium sweet potato (about 1 cup, peeled and cubed)

1 cup milk (whole or 2%)

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp nutmeg

Salt and pepper to taste

1/2 cup panko breadcrumbs

2 tbsp butter, melted

1/4 cup Parmesan cheese, grated

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sweet Potato: While the pasta is cooking, place the sweet potato cubes in a pot of salted water. Bring to a boil and cook until tender, about 10-15 minutes. Drain, and mash the sweet potatoes until smooth.

      Make the Cheese Sauce: In a medium saucepan over medium heat, combine the milk, mashed sweet potato, garlic powder, onion powder, nutmeg, salt, and pepper. Stir until well combined and heated through.

        Add Cheeses: Reduce the heat to low. Whisk in the sharp cheddar cheese and cream cheese until melted and smooth. Adjust seasoning if necessary.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring well to ensure all the pasta is coated in the creamy mixture.

            Prepare the Topping: In a small bowl, combine the panko breadcrumbs, melted butter, and grated Parmesan cheese. Mix until the breadcrumbs are evenly coated.

              Assemble and Bake: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish. Evenly sprinkle the breadcrumb mixture over the top.

                Bake: Bake in the preheated oven for 20-25 minutes or until the topping is golden brown and crispy.

                  Garnish and Serve: Once baked, allow to cool for a few minutes. Garnish with fresh parsley if desired, then serve warm.
