Ingredients

12 oz penne pasta

1 cup sun-dried tomatoes, packed in oil, drained and chopped

4 cloves garlic, minced

1 medium onion, diced

1 cup heavy cream

1 cup vegetable or chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Optional: Red pepper flakes, for a hint of spice

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until softened. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes, dried basil, oregano, and a pinch of salt and pepper. Cook for about 2-3 minutes, allowing the flavors to meld.

Create the Sauce: Pour in the vegetable or chicken broth and bring the mixture to a simmer. Allow it to reduce slightly (about 5 minutes). Then, slowly stir in the heavy cream, bringing it to a gentle simmer.

Cheese it Up: Add the grated Parmesan cheese, stirring until melted and creamy. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

Combine Pasta & Sauce: Add the cooked penne pasta to the sauce in the skillet and toss well to combine, ensuring the pasta is fully coated in the creamy sauce. Adjust seasoning with salt, pepper, and red pepper flakes if desired.

Serve: Plate the creamy sun-dried tomato penne pasta and garnish with fresh basil leaves. Serve immediately with extra Parmesan on the side.
