Creamy Spinach Turkey Meatballs

1 pound ground turkey

1 cup fresh spinach, chopped

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Olive oil for cooking

For the Creamy Sauce:

1 tablespoon olive oil

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon dried basil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Make the Meatball Mixture: In a large mixing bowl, combine the ground turkey, chopped spinach, breadcrumbs, 1/4 cup grated Parmesan, egg, minced garlic, oregano, salt, black pepper, and red pepper flakes (if using). Mix until everything is well incorporated.

      Form the Meatballs: Using your hands, form the mixture into golf ball-sized meatballs, about 1.5 inches in diameter.

        Cook the Meatballs: In a large skillet, heat some olive oil over medium heat. Once hot, add the meatballs in batches to avoid overcrowding. Cook them for about 5-7 minutes, turning occasionally until they are browned on all sides. Remove from the skillet and set aside.

          Make the Creamy Sauce: In the same skillet, add 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 30 seconds. Pour in the heavy cream and chicken broth, stirring to combine. Add in the 1/2 cup grated Parmesan and basil. Season with salt and pepper to taste. Allow the sauce to simmer for about 5 minutes until it thickens slightly.

            Combine Meatballs and Sauce: Carefully add the browned meatballs back into the skillet with the creamy sauce. Gently coat the meatballs in the sauce and simmer for an additional 5 minutes until heated through.
