4 medium sweet potatoes

2 tablespoons olive oil

Salt and pepper to taste

2 cups fresh spinach, chopped

1 cup ricotta cheese

½ cup cream cheese, softened

½ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon nutmeg

¼ teaspoon red pepper flakes (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and pierce them a few times with a fork. Rub the skins with olive oil, and sprinkle with salt. Place them on a baking sheet lined with parchment paper.

      Bake the Sweet Potatoes: Bake the sweet potatoes in the preheated oven for 45-60 minutes, or until they are tender and can be easily pierced with a fork.

        Cook the Spinach: While the sweet potatoes are baking, heat a medium skillet over medium heat. Add a splash of olive oil and the chopped spinach. Sauté for about 2-3 minutes, until the spinach is wilted. Remove from heat and let cool slightly.
