Ingredients

8 oz (225g) penne or fusilli pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

5 oz (150g) fresh spinach, washed and dried

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

Red pepper flakes (optional, for a kick)

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

Add Spinach: Stir in the fresh spinach and cook until it wilts, about 2-3 minutes.

Make the Cream Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, Italian seasoning, salt, and black pepper. Cook for about 2-3 minutes, allowing the sauce to thicken slightly. If you like a bit of heat, add red pepper flakes to taste.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing well to combine with the creamy sauce. Heat through for about 2 minutes, ensuring the pasta is nicely coated.

Serve: Garnish with fresh basil leaves and additional Parmesan cheese before serving. Enjoy your creamy spinach pasta hot!
