8 oz (225g) pasta of choice (e.g., penne, fettuccine)

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (button or cremini)

5 oz (140g) fresh spinach (or 1 cup frozen spinach)

1 cup heavy cream

1 cup vegetable broth

1 tsp Italian seasoning

Salt and pepper, to taste

½ cup grated Parmesan cheese (plus extra for serving)

Juice of ½ lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set the pasta aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes or until softened. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Sauté for 5-7 minutes, or until they are browned and any released moisture has evaporated.

        Add Spinach: Toss in the fresh spinach (if using frozen, thaw and drain beforehand). Cook until wilted, about 2-3 minutes. Season with Italian seasoning, salt, and pepper.

          Create the Cream Sauce: Pour in the heavy cream and vegetable broth, stirring to combine. Let it simmer for about 5 minutes until slightly thickened. If the sauce is too thick, you can add some reserved pasta water to reach your desired consistency.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it evenly in the creamy mixture. Stir in grated Parmesan cheese and lemon juice. Adjust seasoning with more salt and pepper if necessary.

              Serve and Garnish: Remove from heat and serve immediately. Garnish with extra Parmesan cheese and chopped parsley.
