Creamy Spinach and Mushroom Pasta

8 oz (225g) fettuccine or your favorite pasta

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button)

4 cups fresh spinach, packed

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 tsp red pepper flakes (adjust to taste)

Salt and black pepper to taste

Fresh basil leaves for garnish

Zest of 1 lemon (optional)

Instructions
 

Cook the pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside.

    Sauté the aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add mushrooms: Add the sliced mushrooms to the skillet, season with a pinch of salt and black pepper, and cook for about 5-7 minutes, stirring frequently, until they release their moisture and become golden brown.

        Incorporate spinach: Stir in the fresh spinach and cook for 2-3 minutes until wilted.

          Make the sauce: Reduce the heat to low, and pour in the heavy cream. Mix well, scraping the bottom of the skillet to incorporate any browned bits. Add the grated Parmesan cheese and red pepper flakes, stirring until the cheese has melted and the sauce is creamy. If the sauce becomes too thick, gradually add in reserved pasta water until you reach your desired consistency. Taste and adjust seasoning with salt and pepper.

            Combine pasta and sauce: Add the cooked pasta to the skillet and toss gently until well coated with the sauce. If using lemon zest, sprinkle it over the top for a fresh finish.
