8 oz fettuccine or spaghetti pasta

1 lb boneless, skinless chicken breasts, cubed

2 tbsp olive oil

3 cloves garlic, minced

5 oz fresh spinach, rinsed and chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

½ tsp red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken, seasoning with salt and pepper. Cook until golden brown and fully cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Spinach: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

        Make the Cream Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Allow the sauce to simmer for 2-3 minutes until slightly thickened.

          Combine Ingredients: Add the cooked pasta and chicken back into the skillet, tossing gently to combine. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
