8 oz (225 g) penne pasta

1 lb (450 g) boneless, skinless chicken breasts, diced

2 cups fresh spinach, washed and chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, add the diced chicken. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally until the chicken is cooked through and no longer pink. Remove chicken from the skillet and set aside.

      Sauté Garlic and Spinach: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Then add the chopped spinach and red pepper flakes (if using), cooking for about 2-3 minutes until the spinach is wilted.

        Create the Sauce: Pour in the heavy cream, stirring well to combine with the spinach and garlic. Allow the mixture to simmer for 2-3 minutes, letting it slightly thicken.

          Combine Ingredients: Return the cooked chicken to the skillet, followed by the cooked penne pasta. Toss everything together gently. Add grated Parmesan cheese and mix until the cheese is melted and evenly distributed. Adjust seasoning with salt and pepper as needed.
