1 pound (450g) cherry tomatoes

3 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon dried oregano

1 teaspoon crushed red pepper flakes (optional)

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

12 ounces (340g) pasta of your choice (fettuccine, penne, or spaghetti work well)

Fresh basil leaves, for garnish

Extra grated Parmesan, for serving

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C).

      Roast the Tomatoes:

        - In a large baking dish, combine the cherry tomatoes with olive oil, salt, black pepper, oregano, and crushed red pepper flakes, if using.

          - Toss to ensure the tomatoes are well coated.

            - Roast in the preheated oven for 25-30 minutes or until the tomatoes are blistered and caramelized.

              Cook the Pasta:

                - While the tomatoes are roasting, cook the pasta according to package instructions in a large pot of salted boiling water until al dente.

                  - Reserve 1 cup of pasta water before draining the pasta.

                    Make the Creamy Sauce:

                      - In a large skillet over medium heat, add the minced garlic and sauté for about 1-2 minutes until fragrant (be careful not to burn it).

                        - Once the tomatoes are done roasting, carefully add them (along with all the juices) into the skillet with the garlic.

                          - Pour in the heavy cream and stir to combine. Allow the mixture to simmer for 2-3 minutes.

                            Combine Pasta and Sauce:

                              - Add the drained pasta to the skillet with the creamy tomato mixture.

                                - Toss to combine, adding reserved pasta water a little at a time until your desired consistency is achieved.

                                  - Stir in the grated Parmesan cheese until fully melted and incorporated. Adjust seasoning with more salt and pepper if needed.

                                    Serve:

                                      - Divide the creamy roasted tomato pasta among plates.

                                        - Garnish with fresh basil leaves and extra grated Parmesan cheese.
