12 oz cheese tortellini (fresh or frozen)

2 large red bell peppers

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth (or chicken broth)

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Red Peppers:

    - Preheat your oven to 450°F (232°C).

      - Place the whole red bell peppers on a baking sheet and drizzle them with olive oil. Roast for about 25-30 minutes, turning once halfway through, until they are charred and blistered. Remove them from the oven and let them cool.

        Make the Sauce:

          - Once the peppers are cool enough to handle, peel off the skins and remove the seeds. Cut them into strips.

            - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

              Blend the Peppers:

                - In a blender or food processor, combine the roasted red peppers with the sautéed onion and garlic, heavy cream, vegetable broth, Italian seasoning, and red pepper flakes. Blend until smooth.

                  Cook the Tortellini:

                    - In a separate pot, bring water to a boil and cook the tortellini according to package instructions until al dente. Drain and set aside.

                      Combine and Serve:

                        - Pour the roasted red pepper sauce into the skillet and bring it to a gentle simmer. Add salt, pepper, and grated Parmesan cheese; stir until well combined.

                          - Gently toss in the cooked tortellini until fully coated with the sauce.
