1 can (15 oz) chickpeas, rinsed and drained

1 cup roasted red peppers (jarred or homemade)

1/4 cup tahini

2 tablespoons olive oil

2 tablespoons lemon juice

1 garlic clove, minced

1/2 teaspoon ground cumin

1/4 teaspoon smoked paprika

Salt and black pepper to taste

Water as needed for consistency

Fresh parsley for garnish (optional)

Pita chips or vegetable sticks for serving

Instructions
 

Prep the Ingredients: If using jarred roasted red peppers, drain them well. If making your own, roast red bell peppers over an open flame or under a broiler until charred, then wrap them in foil for about 15 minutes and peel the skin off once cooled.
