Creamy Roasted Garlic Hummus

1 cup canned chickpeas, drained and rinsed

4 cloves of garlic

2 tablespoons tahini

2 tablespoons extra virgin olive oil

3 tablespoons fresh lemon juice

1 teaspoon ground cumin

Salt, to taste

2-4 tablespoons water (as needed for consistency)

Fresh herbs (like parsley) and paprika, for garnish

Roast the Garlic: Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil, drizzled with a little olive oil. Roast for about 20-25 minutes, until the cloves are soft and fragrant. Allow to cool slightly, then squeeze the roasted garlic out of their skins.

    Blend the Ingredients: In a food processor, combine the drained chickpeas, roasted garlic, tahini, olive oil, lemon juice, ground cumin, and a pinch of salt. Blend until the mixture is smooth.

      Adjust Consistency: While blending, slowly add water, one tablespoon at a time, until you reach your desired creamy consistency. Scrape down the sides of the bowl as necessary to ensure everything is well mixed.

        Taste and Adjust: Taste the hummus and add more salt, lemon juice, or tahini if desired. Blend again to mix thoroughly.

          Serve: Transfer the creamy roasted garlic hummus to a serving bowl. Drizzle a little extra olive oil on top, and garnish with fresh herbs and a sprinkle of paprika for color.

            Chill (Optional): For best flavor, let the hummus chill in the refrigerator for at least 30 minutes before serving.
