Creamy Roasted Garlic Hummus

Ingredients
  

1 head of garlic

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

3 tablespoons olive oil, plus more for drizzling

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt, to taste

2-4 tablespoons water (as needed)

Fresh parsley, chopped (for garnish)

Pita bread or fresh veggies for serving

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Cut the top off the head of garlic to expose the individual cloves. Drizzle with a little olive oil and wrap it in aluminum foil. Place it in the oven and roast for about 30-35 minutes, or until the cloves are soft and golden.

        Prepare the Hummus Base:

          - In a food processor, combine the drained chickpeas, tahini, olive oil, lemon juice, ground cumin, and smoked paprika. Squeeze the roasted garlic cloves out of their skins into the food processor. Add salt to taste.

            Blend Until Smooth:

              - Process the mixture until it becomes creamy and smooth. If the hummus is too thick, gradually add 2-4 tablespoons of water, blending until you reach your desired consistency.

                Taste and Adjust:

                  - Taste your hummus and adjust seasoning based on your preference. You might want to add more lemon juice or salt.

                    Serve:
