1 head of garlic

12 oz fettuccine pasta

2 tablespoons olive oil

1 cup heavy cream

1 cup grated Parmesan cheese

4 tablespoons unsalted butter

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper (freshly ground)

1/4 teaspoon nutmeg (optional)

Fresh parsley, chopped (for garnish)

Lemon zest (for garnish)

Roast the Garlic: Preheat your oven to 400°F (200°C). Remove the outer layers of the garlic bulb, leaving the skins on. Slice off the top of the head of garlic (about 1/4 inch) to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Roast in the oven for about 30-35 minutes until the cloves are soft and caramelized. Once done, let it cool slightly, then squeeze the roasted garlic into a bowl and mash it with a fork. Set aside.

    Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of the pasta cooking water, then drain the pasta and return it to the pot.
