8 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red bell pepper, chopped

1 cup frozen peas, thawed

1/2 cup cooked and crumbled bacon (optional)

1 cup shredded cheddar cheese

1/2 cup mayonnaise

1/2 cup sour cream

1 packet (1 oz) ranch seasoning mix

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool.
