12 ounces pasta of your choice (fettuccine, penne, or spaghetti work well)

Cook the Pasta: Begin by boiling a pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute, until fragrant.

      Create the Sauce Base: Lower the heat to medium-low and add the pumpkin puree to the skillet. Stir until well combined with the onions and garlic. Cook for another 2-3 minutes.

        Add Cream: Pour in the heavy cream gradually, stirring constantly to create a smooth mixture. Raise the heat slightly and bring the sauce to a gentle simmer.
