Creamy Pumpkin Alfredo Sauce

Ingredients
  

1 cup pumpkin puree (canned or fresh)

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

½ teaspoon nutmeg

½ teaspoon cinnamon

Salt and pepper to taste

12 ounces fettuccine or your pasta of choice

Fresh parsley or sage, chopped (for garnish)

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining the rest.

      Make the Alfredo Sauce:

        In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

          Combine Pumpkin and Cream:

            Stir in the pumpkin puree and heavy cream, mixing well until the ingredients are combined and heated through.

              Add Seasonings:

                Sprinkle in the grated Parmesan cheese, nutmeg, and cinnamon. Stir until the cheese has melted and the sauce is creamy. If the sauce is too thick, add the reserved pasta water a little at a time until you reach your desired consistency.

                  Season to Taste:

                    Taste the sauce and season with salt and pepper as needed. You can adjust the spices according to your preference, adding a pinch more nutmeg or cinnamon if desired.

                      Combine Pasta and Sauce:

                        Add the drained fettuccine to the skillet, tossing to coat the pasta evenly with the creamy pumpkin sauce. Cook for another minute or two, allowing the pasta to absorb some of the sauce.
