1 lb (450g) potato gnocchi

2 cups fresh baby spinach, chopped

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1/4 cup grated Parmesan cheese, plus more for serving

2 tbsp olive oil

2 cloves garlic, minced

Salt and pepper to taste

1/4 tsp red pepper flakes (optional)

Toasted pine nuts or walnuts for garnish (optional)

Instructions
 

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions, usually about 2-3 minutes or until they float to the surface. Once cooked, drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once heated, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Spinach: Add the chopped spinach to the skillet and cook for another 2-3 minutes, stirring occasionally, until wilted.

        Create the Sauce: Lower the heat and add the heavy cream to the skillet. Stir in the basil pesto and grated Parmesan cheese, mixing well to combine. Allow the sauce to simmer for about 3-5 minutes, letting it thicken slightly.

          Combine Gnocchi and Sauce: Gently fold in the cooked gnocchi, ensuring they are well-coated with the creamy pesto sauce. Season with salt, pepper, and red pepper flakes (if using) to taste.

            Serve: Remove from heat and serve immediately, garnished with extra Parmesan cheese and toasted pine nuts or walnuts if desired.
