Creamy Pesto Chicken Penne

12 oz penne pasta

2 tablespoons olive oil

1 lb chicken breast, diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup heavy cream

1 cup basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Once cooked, drain and set aside, reserving 1/2 cup of pasta water for later.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken breast and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Cream Sauce: In the same skillet, lower the heat and add the heavy cream. Stir constantly, scraping any bits from the bottom of the pan, until the cream is heated through. Gradually stir in the basil pesto and Parmesan cheese until well combined and creamy.

        Combine Everything: Add the cooked pasta and sautéed chicken to the skillet. Toss gently to combine, adding reserved pasta water a little at a time if needed to achieve desired creaminess.

          Add Cherry Tomatoes: Gently fold in the halved cherry tomatoes and cook for an additional 2-3 minutes until they are just warmed through.

            Serve: Remove from heat and serve immediately, garnished with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired.
