Creamy Pesto Chicken Lasagna

9 lasagna noodles (preferably no-boil)

2 cups cooked chicken, shredded

1 cup ricotta cheese

2 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

1 cup pesto sauce (store-bought or homemade)

2 cups spinach, fresh or sautéed

1 cup heavy cream

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Olive oil, for drizzling (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, pesto sauce, garlic powder, Italian seasoning, and season with salt and pepper. Mix well until all ingredients are thoroughly incorporated.

      Assemble the Lasagna: In a 9x13 inch baking dish, spread 1/3 of the heavy cream on the bottom. Layer 3 lasagna noodles over the cream. Spread half of the chicken mixture over the noodles, followed by half of the spinach, then top with another 1/3 of the heavy cream.

        Repeat Layers: Add another layer of 3 noodles, followed by the remaining chicken mixture, the remaining spinach, and another 1/3 of the heavy cream. Top with the final layer of 3 noodles, pour the remaining heavy cream over the top, and sprinkle the remaining mozzarella and Parmesan cheeses evenly.

          Bake the Lasagna: Cover the dish with aluminum foil (try to prevent it from touching the cheese) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden brown.

            Cool and Serve: Let the lasagna cool for about 10 minutes before slicing. Drizzle with a little olive oil, if desired, and serve warm. Enjoy!
