8 oz. whole wheat spaghetti or rice noodles

1/4 cup natural peanut butter

3 tbsp soy sauce (low sodium)

2 tbsp sesame oil

1 tbsp honey or maple syrup

1-2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp rice vinegar

1 tbsp sriracha (optional, for heat)

1 cup cucumbers, julienned

1 cup carrots, shredded

1/4 cup green onions, thinly sliced

1/4 cup roasted peanuts, chopped (for garnish)

1 tbsp sesame seeds (for garnish)

Fresh cilantro (for garnish, optional)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the spaghetti or rice noodles according to package instructions until al dente. Once cooked, drain and set aside, reserving a small cup of pasta water for later.

    Prepare the Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, sesame oil, honey (or maple syrup), minced garlic, grated ginger, rice vinegar, and sriracha (if using). Add a splash of reserved pasta water to loosen the sauce to a creamy consistency.
