8 oz (225g) pasta (fettuccine or penne works well)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button)

5 oz (140g) fresh spinach

1 cup (240ml) heavy cream

1/2 cup (50g) grated Parmesan cheese

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh basil leaves for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Mushrooms: Add the sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until they are tender and browned.

        Incorporate Spinach: Fold in the fresh spinach and cook for an additional 2 minutes until wilted.

          Make the Sauce: Pour in the heavy cream, stirring to combine with the vegetables. Add the grated Parmesan cheese, Italian seasoning, salt, and pepper. Let the sauce simmer for 3-4 minutes, allowing it to thicken slightly. If the sauce gets too thick, gradually add reserved pasta water until you achieve your desired consistency.
