Creamy Mushroom & Rice Soup

1 cup Arborio rice

1 lb fresh mushrooms (cremini or button), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

2 cups milk (or any non-dairy milk)

1 cup heavy cream

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons butter

Salt and pepper to taste

Fresh parsley or chives for garnish

Sauté the Aromatics: In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and garlic; sauté for about 3-4 minutes until soft and fragrant.

    Cook the Mushrooms: Add the sliced mushrooms to the pot and cook for an additional 5-7 minutes, until they begin to brown and release their juices. Stir in the thyme.

      Add the Rice: Pour in the Arborio rice, stirring to coat it with the mushroom mixture. Toast the rice for about 2 minutes, allowing it to absorb some of the flavors.

        Pour in the Broth: Gradually add the vegetable broth to the pot, stirring continuously. Bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes or until the rice is tender and has absorbed most of the liquid.

          Add Creaminess: Stir in the milk and heavy cream, allowing the soup to heat through. Adjust the consistency by adding more broth if necessary. Bring the mixture to a simmer again but do not let it boil.

            Season to Taste: Season the soup with salt and pepper according to your preference. Remove from heat.
