Creamy Mushroom and Goat Cheese Tarts

1 sheet of puff pastry (thawed if frozen)

2 cups of mixed mushrooms (shiitake, cremini, and button), sliced

2 tablespoons of olive oil

1 medium onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon of fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper to taste

4 ounces of goat cheese, crumbled

½ cup of heavy cream

1 large egg

1 tablespoon of Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Puff Pastry: Unroll the puff pastry on a lightly floured surface. Use a rolling pin to smooth it out to a thickness of about 1/8 inch. Cut the pastry into 4 equal squares (or rounds, depending on your preference) and place them on a parchment-lined baking sheet.

      Cook the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Add the minced garlic, thyme, and rosemary, stirring until fragrant, for about 1 minute.

        Sauté the Mushrooms: Add the sliced mushrooms to the skillet. Season with salt and pepper. Cook for 6-8 minutes until the mushrooms are browned and have released their moisture. Remove the skillet from heat and let it cool slightly.

          Make the Creamy Filling: In a mixing bowl, combine the heavy cream, egg, and Dijon mustard. Mix until well combined. Add the cooled mushroom mixture and half of the crumbled goat cheese, stirring gently to combine.

            Assemble the Tarts: On the prepared puff pastry squares, leave a small border around the edges. Using a fork, prick the center of each pastry to prevent it from puffing up too much. Divide the mushroom and goat cheese filling evenly among the tarts. Sprinkle the remaining goat cheese on top.

              Bake the Tarts: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the pastry is golden brown and crispy.

                Garnish and Serve: Remove the tarts from the oven. Allow them to cool for a few minutes, then garnish with freshly chopped parsley before serving.
