1 cup couscous

1 cup vegetable broth (or water)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

½ cup heavy cream (or coconut cream for a vegan option)

Zest of 1 lemon

2 tablespoons fresh lemon juice

¼ cup freshly chopped parsley

¼ cup freshly chopped dill

Salt and pepper to taste

½ cup cherry tomatoes, halved

¼ cup crumbled feta cheese (or vegan feta for a dairy-free option)

Fresh lemon slices for garnish

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Add the couscous, stir, and remove from heat. Cover and let it sit for about 5 minutes, then fluff with a fork.

    Sauté Aromatics: While the couscous is resting, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Make the Creamy Mixture: In a bowl, combine the heavy cream, lemon zest, lemon juice, fresh parsley, and fresh dill. Add the sautéed onion and garlic mix, and stir until well blended. Season with salt and pepper to taste.

        Combine Ingredients: Add the fluffed couscous to the creamy mixture, along with the halved cherry tomatoes. Gently fold everything together until the couscous is fully coated.
