Creamy Lemon Garlic Risotto

1 cup Arborio rice

4 cups vegetable broth, warmed

1 medium onion, finely chopped

3 cloves garlic, minced

1/2 cup dry white wine (optional)

1 cup freshly grated Parmesan cheese

1/2 cup heavy cream

1 medium lemon (zest and juice)

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté Aromatics: In a large saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Toast the Rice: Add the Arborio rice to the pan and stir well to coat the rice with the oil and butter, cooking for about 2-3 minutes until the rice becomes slightly translucent at the edges.

      Deglaze with Wine: If using, pour in the dry white wine and stir continuously until it has mostly evaporated, about 2-3 minutes. This adds depth of flavor to the risotto.

        Add Broth Gradually: Start adding the warmed vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to be mostly absorbed before adding the next ladle of broth. This process should take around 18-20 minutes. The risotto should be creamy and slightly al dente when done.

          Incorporate Cream and Cheese: Once the rice is cooked, remove the pan from heat. Stir in the heavy cream, grated Parmesan cheese, lemon zest, and lemon juice. Mix well until the risotto is creamy.

            Season to Taste: Taste the risotto and season with salt and pepper as desired. If you like a stronger lemon flavor, add more lemon juice or zest.

              Finish with Butter: Stir in the remaining tablespoon of butter for an extra rich finish.
