Creamy Herb Polenta

1 cup polenta (coarse cornmeal)

4 cups vegetable broth

1 cup heavy cream or half-and-half

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme, chopped

1 teaspoon fresh rosemary, chopped

Salt and pepper to taste

Fresh herbs for garnish (basil or parsley)

Instructions
 

In a medium saucepan, bring the vegetable broth to a boil over medium-high heat.

    Reduce the heat to low and slowly whisk in the polenta. Stir continuously for about 5-7 minutes, until the polenta thickens and begins to pull away from the sides of the pan.

      In a separate small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn it.

        Stir the sautéed garlic into the polenta, and then add the heavy cream, butter, grated Parmesan cheese, thyme, rosemary, salt, and pepper. Mix well until creamy and smooth.

          Taste and adjust seasoning as needed. If the polenta is too thick, feel free to add a bit more vegetable broth or cream to reach your desired consistency.

            Once fully combined and creamy, remove from heat and let it rest covered for about 5 minutes.

              Serve the creamy herb polenta warm, garnishing with fresh herbs on top for an extra touch of flavor and presentation.
