Creamy Goat Cheese Pasta

12 oz pasta (fettuccine or your choice)

6 oz fresh goat cheese, crumbled

1/2 cup heavy cream

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup spinach, fresh or frozen (thawed and drained)

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon lemon zest

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1 cup of the pasta water, then drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until it becomes translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Spinach and Tomatoes: Toss in the spinach and cherry tomatoes. Cook for 2-3 minutes until the spinach wilts (if using fresh) and the tomatoes softens slightly.

        Make the Sauce: Lower the heat and pour in the heavy cream. Stir well to combine. Crumble in the goat cheese and mix until it melts and creates a creamy texture. If the sauce is too thick, gradually add in the reserved pasta water until the desired consistency is reached.

          Combine Pasta: Add the cooked pasta to the skillet and toss until the pasta is completely coated in the creamy goat cheese sauce. Mix in the lemon zest, Parmesan cheese, salt, and pepper to taste.

            Serve: Plate the pasta and garnish with fresh basil leaves and additional crumbled goat cheese if desired. Serve warm and enjoy!
