12 oz fettuccine or your favorite pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts (about 1 lb)

Salt and pepper to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (basil, oregano, thyme)

2 cups fresh spinach

1 tablespoon fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from skillet, let it rest, and then slice into strips.
