Creamy Garlic Chicken and Vegetable Skillet

2 boneless, skinless chicken breasts

1 cup broccoli florets

1 cup sliced bell peppers (any color)

1 medium carrot, julienned

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Prep the Chicken: Season both sides of the chicken breasts with salt, pepper, thyme, and paprika.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the butter. Once melted, add the minced garlic, broccoli florets, sliced bell peppers, and julienned carrots. Sauté for about 4-5 minutes, until the vegetables are slightly tender.
