12 oz (340 g) pasta (penne or fusilli works best)

1 cup cherry tomatoes, halved

1 cup sweet corn (canned or frozen, thawed)

1 cup black beans, rinsed and drained

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1 avocado, diced

1/2 cup fresh cilantro, chopped

3/4 cup sour cream

1/4 cup mayonnaise

2 tbsp chipotle pepper in adobo sauce, minced

1 tbsp lime juice

1 tsp garlic powder

Salt and pepper to taste

Optional: Lime wedges for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a medium bowl, combine the sour cream, mayonnaise, minced chipotle peppers, lime juice, garlic powder, salt, and pepper. Mix until well blended and creamy.
