1 lb (450 g) boneless, skinless chicken breasts, diced

2 cups fresh or frozen corn kernels

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, peeled and diced

4 cups chicken broth

1 cup heavy cream

1 tsp dried thyme

½ tsp paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley or chives for garnish (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 3-5 minutes).
