1 medium head of cauliflower, chopped into florets

1 medium onion, diced

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup whole milk or heavy cream

2 cups sharp cheddar cheese, shredded

2 tablespoons olive oil

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

Optional toppings: croutons, crispy bacon bits, chives, or extra cheese

Instructions
 

Prep the Cauliflower: Rinse the cauliflower and chop it into florets. Set aside.

    Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent. Stir in the garlic and cook for an additional minute until fragrant.

      Cook the Cauliflower: Add the cauliflower florets to the pot along with the salt, black pepper, and smoked paprika. Stir well to combine and then pour in the vegetable or chicken broth. Bring to a boil, then reduce the heat to medium-low and let it simmer for about 15-20 minutes, or until the cauliflower is tender.

        Blend the Soup: Once the cauliflower is tender, use an immersion blender to puree the mixture until smooth. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender in batches. Return the blended soup to the pot.

          Add Creaminess: Stir in the milk or heavy cream. Gradually add the shredded cheddar cheese, stirring until melted and combined. Adjust seasoning with more salt and pepper if needed.
