1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

4 cups low-sodium chicken or vegetable broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon black pepper

Salt to taste

1 cup assorted cheeses (e.g., Brie, gouda, aged cheddar), cubed

1 cup assorted cured meats (e.g., salami, prosciutto, chorizo), chopped

1 cup pickled vegetables (e.g., gherkins, pickled onions) for garnish

Fresh herbs (e.g., parsley or chives), chopped for garnish

Crusty bread or crostini, for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic, diced carrots, and diced celery to the pot. Sauté for an additional 5-7 minutes, stirring occasionally until the vegetables are tender.

      Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes to allow the flavors to meld.

        Stir in the heavy cream, dried thyme, smoked paprika, black pepper, and salt to taste.

          Gradually add the assorted cheeses, stirring gently until melted and smooth. Let the soup simmer for another 5 minutes, ensuring it doesn’t boil.

            Remove from heat and stir in the chopped cured meats for added flavor and richness.
