1 lb large shrimp, peeled and deveined

2 tbsp Cajun seasoning

2 tbsp olive oil

4 cloves garlic, minced

1 medium onion, diced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
