Creamy Cajun Shrimp Pasta

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 small onion, diced

4 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 teaspoon Cajun seasoning (plus extra for serving)

½ teaspoon smoked paprika

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Sauté the Shrimp: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the shrimp, season with Cajun seasoning and smoked paprika, and sauté for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.

        Combine Ingredients: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer and let it cook for 5 minutes, allowing it to thicken slightly.

          Mix in Cheese: Reduce the heat to low, and whisk in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
