1 cup stone-ground grits

4 cups water

1 teaspoon salt

1 cup heavy cream

2 tablespoons unsalted butter

1 pound large shrimp, peeled and deveined

2 tablespoons Cajun seasoning (adjust to taste)

4 slices of bacon, chopped

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Grits: In a medium saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil. Gradually whisk in the stone-ground grits, reduce the heat to low, and cover. Cook until thickened, about 20-25 minutes, stirring occasionally. Stir in the heavy cream and 2 tablespoons of butter until creamy. Set aside and keep warm.

    Prepare the Shrimp: While the grits are cooking, season the shrimp with Cajun seasoning, making sure they are well coated.

      Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy. Remove and drain on a paper towel, but leave the rendered fat in the skillet.

        Sauté Vegetables: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the garlic and red bell pepper, and cook until soft, about another 3 minutes.

          Cook the Shrimp: Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on each side, until they are pink and opaque. Stir in the halved cherry tomatoes and cook for an additional 1-2 minutes until they are just tender.

            Combine and Serve: Once everything is cooked, fold the crispy bacon back into the shrimp mixture. Spoon the creamy grits into bowls, and top with the Cajun shrimp and vegetable mixture. Garnish with sliced green onions and fresh parsley. Serve with lemon wedges on the side for an extra zest.
